This is my 2nd order of your pecan wood (first order was in June/July) and
the first for your salt. I've been quite pleased with the pecan as I hadn't
used it before and have heard great things about its flavor. Having used
hickory and mesquite many times before I'd been ready for a change. I'm
glad I found your website.

By the way I smoked 3 turkeys last week with your wood (one made its way up
to New Jersey where our son goes to school, one made its way to my parents
where my wife and I spent Thanksgiving, and the last one stayed in St. Louis
where my wife and I have been enjoying it) and all of them were met with
rave reviews.

I usually have a big party in August. Last year we consumed 75 lbs of
brisket, & I almost didn't get any. It's kinda tradition for us, & we
always have the folks bring along donations for the food bank, so's a
whole lotta folks get good eatin.

I wanted to let you know that I enjoyed your page regarding turkey smoking.
I am following your instructions to a tee. I live in Arlington, and it is
cold and drizzly here too. I will probably have to use more mesquite than I
thought, but luckily I have plenty.
So do you stay up all night smoking the turkey or do you get some sleep?

Recieved my wood today. Very nice.

One ? I need to ask. Why don't you recommend soaking the chunks before use. I read in some books that
by soaking you get more smoke per chunk for a longer time. I've been doing it that way for some time and
was wondering what your thoughts are on this.

Dear Bob
I do not recommend soaking mesquite or pecan wood in water because
wet wood will release acids and give your BBQ a sour taste. Wet wood
will also cause a smut smudge to the inside of your smoker that you
will never get out. Wet wood only prolongs the true smoking
flavor of the wood. So I say why soak the wood in water and once the
water evaporates your right back to where you started a dry piece of
wood and smoking with a true wood flavor and the water did nothing to
help your BBQ FLAVOR.

I Love my Y2k Smoker!!!

My search began 2 months ago. I never had smoked meats before, but alway wanted to try it. Most of the units available from Home Depot were huge and not really constructed for longterm use.I searched around the net and found many high quality Pits but they were too big and too expensive for my budget. Finally i stumbled across Bobby Blanton's site and looked at his Y2k patio smoker. It seemed like the perfect size... wasn't too big to dominate our small patio area and looked very well constructed. I quickly called bobby, who was great on the phone.. asked me all the right questions to customize the smoker/grill for me. I could tell customer satisfaction was very important to him. At the same time I ordered some wood and downloaded a bunch of recipes and printed out all the instructions on smoker care and use from his very detailed and expansive website.

A few weeks later, the smoker arrived. It was beautiful. My wife even loved the look of it mounted on our Texas-T -Post.

This smoker is extremely well finished and constructed. This smoker will probably last for generations... The steel is very heavy, the parts all heavy duty, the finish is very well done with no rough edges. The assembly was a snap... taking less than 5 minutes. Now for the cooking....

I was nervous... I bought a bunch of chicken and followed the instructions on Bobby's websight exactly as shown utilizing the Honey dijon basting sause and BBQ salt. The temperature was easy to control with the thermometer. The heat stays at 220 temperature for a long time without much fiddling. After 3 hours my family had the best /most mouth watering chicken they have ever had. Well..... now the family wants.. ribs, brisket....and vegies utilizing the smoker. Gotta get busy... thanks for building a greatsmoker

As a long time dedicated gas grilling person I am writing this note somewhat in dismay. This year I purchased a new gas grill and a new New Braunfels smoker. My thinking was I would use my smoker a few times a year for parties on our large deck here in Ohio, but I figured my gas grill would still be the workhorse. I was right, initially. You see I always bought my wood from home centers in 10lb bags (Hickory, Mesquite). They worked just fine. Then I found your website and my gas grilling days almost disappeared. I order a 10lb box of Pecan Chunks to see if it really mattered... the difference was night and day. Well now my wife makes me smoke everything from ribs to Salmon. In fact we've had smoked Salmon 4 times since September. Your product is absolutely wonderful, I will be ordering the mini-logs with my next order. Your smoking tips and recipes have been a huge help too.
Thanks for all your efforts. I look forward to another wonderful year of smoking in 2002....which, according to my wife is going to start January 1st with probably another Salmon.

I did not know what to get my boss for Christmas but he is a cowboy at heart so I tend to look for cowboy gear instead of the old
